The fruity, peppery flavor from Grains of Paradise is blended with other ancient North African flavors.

Ingredients: Organic Onion Powder, Organic Basil, Organic Lemon Peel Powder, Grains of Paradise, Organic Rosehip Powder.

RECIPE:  Steamed Asparagus

1 bunch fresh asparagus

1 teaspoon AFRICAN LEMON SEASONING

HIMALAYAN PINK SALT to taste

Trim ends and peel lower half of asparagus spears.  Place in a steam basket and cook over boiling water 3-5 minutes, just so the spears remain slightly crunchy.  Immediately upon removing from basket, toss with butter, AFRICAN LEMON SEASONING and Himalayan pink salt.

 

RECIPE:  Egyptian Braised Squash

1 onion, sliced

4 yellow squash, sliced

3 tablespoons olive oil

Salt to taste

3 teaspoons AFRICAN LEMON SEASONING

Sautee onions and squash in oil until slightly soft.  Season to taste with salt, adding AFRICAN LEMON SEASONING.

Cover tightly and cook over low fire for 15 minutes.

Yield:  6 servings

 

RECIPE:  Shrimp Salad

1 pound elbow macaroni, cooked and drained

3/4 cup mayonnaise

2 tablespoons AFRICAN LEMON SEASONING

Salt to taste

2  5-ounce cans shrimp, drained and rinsed

1/2 sweet yellow bell pepper, diced

1 large tomato, diced

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1 tablespoon DRIED CHIVES

1 tablespoon capers

In a large mixing bowl, whisk AFRICAN LEMON SEASONING into mayonnaise; salt to taste.

Add cooked, cooled pasta and remaining ingredients to bowl and toss until dressing coats all.  Add more mayonnaise if it is too dry.

This is a wonderful luncheon dish served with sandwiches and soup; or just by itself as a meal with crackers and iced tea.

Serve as a first course to a meal of roasted meat and sautéed vegetables.

Yield:  4-6 servings

 

RECIPE:  Moroccan Peas and Onions

1 package frozen, unseasoned green English peas with pearl onions

1/2 stick sweet cream butter

1 and 1/2 teaspoons AFRICAN LEMON SEASONING

1 teaspoon fresh-squeezed lemon juice

Salt to taste

Cook peas and onions until done, about 15 minutes; drain.  Stir in butter, AFRICAN LEMON SEASONING and lemon juice.  Stir well until peas and onions are well-coated with butter and seasonings.  Salt to taste and serve.

*Great with lamb and poultry.

*Serve with meatballs and rice.

*Pair with pan-seared chicken breasts and pasta.

*Add cubes of tofu for a vegetarian meal.

*If you cannot find peas with pearl onions at your supermarket, then dice 1/2 onion and add to peas as they cook.

Yield:  4-6 servings

 

RECIPE:  Mediterranean Baked Fish

1 pound boneless fish fillets

3 tablespoons olive oil

1 cup cracker meal

1 tablespoon AFRICAN LEMON SEASONING

Drizzle oil in bottom of a shallow baking dish.  Swipe fillets through oil to coat both sides.  Dredge in cracker meal that has been seasoned with AFRICAN LEMON SEASONING.

Arrange in the baking dish with oil, and bake at 425 degrees 10-15 minutes.  Salt to taste with sea salt.

*Serve with steamed or sautéed vegetables and couscous, rice or pasta.

Yield:  4-6 servings

 

RECIPE:  Moroccan Lemon Chicken

Salt skinless, boneless chicken breasts or turkey cutlets.  Dust generously with AFRICAN LEMON SEASONING.  Top each breast with a thin slice of lemon and bake until done, about 25 minutes.
