RECIPE: Bartonville Goat Burgers
1 pound ground sirloin

RECIPE: Texas Turkey Burgers
1 pound ground turkey
1 and1/2 teaspoons BARTONVILLE BEEF AND BURGER SPICE
2 tablespoons tomato ketchup
1 teaspoon prepared mustard
Divide turkey into 3 patties about 1/2 inch thick. Sprinkle 1/4 teaspoon BARTONVILLE BEEF AND BURGER SPICE evenly on each side of burger. Mix ketchup and mustard; set aside.
Grill or broil burgers as usual, keeping in mind that turkey does not brown like other ground meats. Also, it is very important that they are done on the inside; so grill over a fire that is not as hot as one for beef burgers.
Cook for 5 minutes, turn and baste with sauce. Grill 4 minutes, flip and baste again. Continue cooking another 2 minutes before serving. Discard basting sauce. If more is desired, mix a new batch.

2 pounds mixed summer squash (zucchini, yellow crookneck or patty pan to name just a few).
3 tablespoons cooking oil
2 teaspoons BARTONVILLE BEEF AND BURGER SPICE
Slice squash in thick slabs. Toss in oil, then dust with spice blend. Place in a vegetable grill basket and place over coals. After 3 minutes of cooking, stir and turn with a spatula. Grill another 3 minutes, or until the squash is the way you like it.
*Serve with all the usual fare at the outdoor cookout.
*Assorted pickles will complement these veggies.
*Chilled and tossed with a vinaigrette, they turn into a terrific salad. Mix with chopped iceberg lettuce.
RECIPE: Backwoods Grilled Chicken
