Caraway seed is the fruit of a hardy biennial plant related to the carrot.  Native to Europe and Asia Minor, the bulk of production today is in the Netherlands.

Uses:

*Cheese:  Add whole to cottage cheese, rarebits, cheese spreads and dips, cheese straws and wafers.

*Meats and poultry:  Crush or use whole to season roast pork, pork shops, spare ribs, sausage, braised liver and kidneys.  Add to beef. lamb and oxtail stews.  Use in marinades for all meats.

*Salads:  Coleslaw, sliced cucumbers in vinegar, potato and tomato salads.  Crush and season  salad dressings.

*Vegetables:  Use whole or crushed in cabbage, green beans, carrots, sauerkraut, turnips, onions, potatoes, noodles and rice.

 

RECIPE:  Zeli

1  15-ounce can sauerkraut, drained

1/2 teaspoon WHOLE CARAWAY SEED

3 tablespoons butter, melted

2 teaspoons flour

1 cup water

Place drained sauerkraut in saucepan with WHOLE CARAWAY SEED.

Place remaining ingredients in a jar and shake until well blended.  Pour over kraut and cook until thickened.

*Serve with pork, ham, wieners, smoked sausage and barbeque brisket.

*Toss with boiled potatoes, or serve them on the side with green beans.

Yield:  4-6 servings

 

RECIPE:  Hungarian Goulash

2 onions, sliced

2 pounds beef rump roast, cubed

2 cloves garlic, crushed

Salt and pepper to taste

2 tablespoons HUNGARIAN PAPRIKA

1/2 teaspoon WHOLE CARAWAY SEED

2 cans beef broth

1/4 cup tomato paste

1/2 cup sour cream

Combine all ingredients, except sour cream and pour into a slow cooker.  Cover and cook on high heat for 6-8 hours.

Stir in sour cream before serving.

*Serve with egg noodles, dumplings or boiled potatoes.

*Include fresh green beans or stewed cabbage on the side.

Yield:  6 servings

 

RECIPE:  Caraway Green Beans

1 pound fresh green beans, in 1-inch pieces

1/2 cup sour cream

1 tablespoon flour

1/4 cup milk

Half an onion, finely chopped

1/2 teaspoon sugar

1/2 teaspoon WHOLE CARAWAY SEED

1/2 teaspoon salt

1/4 teaspoon FINE-GRIND WHITE PEPPER

1 cup Swiss cheese, grated

Cook green beans to desired doneness; drain.

In a separate saucepan, blend sour cream and flour.  Stir in milk, onion, sugar, WHOLE CARAWAY SEED, salt and pepper.  Cook until mixture bubbles and thickens.  Stir in cheese until melted and pour over beans.

*Serve with roasted meats and barbeque.

*Pair with boiled potatoes, parsnips, rutabaga or carrots.

Yield:  4 servings

 

RECIPE:  Pork Goulash

2 pounds boneless pork shoulder

2 tablespoons flour

1 tablespoon HUNGARIAN PAPRIKA

1-2 teaspoons salt

1/2 cup cooking oil

2 onions, chopped

1 cup water

1  28-ounce can sauerkraut, drained

1/2 teaspoon WHOLE CARAWAY SEED

1  16-ounce carton sour cream

Cut meat into 1-2 inch cubes and season with HUNGARIAN PAPRIKA and salt.  Roll in flour and brown in oil.

Add onion and continue cooking until onions are soft.  Add water, stirring to loosen brown bits from bottom of pan.

Add remaining ingredients and turn into a greased casserole dish.  Cover tightly and bake at 300 degrees for 2-3 hours; until meat is tender.

*Serve with boiled potatoes, dumplings or egg noodles.

*Include a salad or green vegetables on the side.

Yield:  6-8 servings

 

RECIPE:  Oven Ribs and Kraut

2 pounds pork loin back ribs

Salt and pepper to taste

3 tablespoons cooking oil

1 onion, sliced

1  15-ounce can sauerkraut, drained

1  15-ounce can tomatoes

2 teaspoons WHOLE CARAWAY SEEDS

1-2 teaspoons sugar

Cut ribs into serving-size pieces.  Season with salt and pepper and brown in the oil.

While meat cooks, mix remaining ingredients together and pour into a buttered casserole dish.  Place browned ribs on top.

Deglaze skillet with water, broth or wine (1/2 cup), and pour over casserole.

Cover tightly and bake in a 300 degree oven for 3 hours, or until meat is tender.

*Serve with boiled potatoes or egg noodles.

*Include sautéed cabbage, green beans or squash.

*Don’t forget the garlic bread to mop up the pan juices.
