Denton, Texas is home to two major universities.  This is a great spice blend for a quick stir-fry in the dormitory.

Ingredients: White Sesame Seed, Sweet Bell Pepper, Garlic, Onion, Celery Seed, Orange Peel, Lemon Peel, Ginger, Red Chile Pepper.

RECIPE:  Brunch Egg Casserole

1/4 cup butter

1/4 cup flour

1 teaspoon salt

2 cups milk, heated

2 cups cooked rice

1 cup sharp cheddar cheese, grated

2 teaspoons TEXAS WOMENS’ SPICY VEGETABLE SEASONING

1/2 cup ripe olives, chopped

6 hard-cook eggs

Melt butter in 2-quart saucepan; stir in flour and cook, stirring constantly, over medium heat for about 3 minutes.  Whisk in salt and heated milk; cook until sauce thickens.

Add rice, half of cheese and TEXAS WOMENS’ SPICY VEGETABLE SEASONING.  Mix well and add olives.  Pour half this mixture into a greased casserole dish.  Slice eggs and place over layer of rice mixture.  Add remaining rice mixture; top with remaining cheese.

Bake at 350 degrees for 30 minutes

Yield:  6 servings

 

RECIPE:  Baked Sesame Chicken Breasts 

4 boneless/skinless chicken breasts

Salt to taste

1 egg, beaten

1 tablespoon milk

1 cup bread crumbs

1/4 cup TEXAS WOMENS’ SPICY VEGETABLE SEASONING

1/4 cup olive oil

Season chicken with salt; set aside.  Beat milk into egg; set aside.  Blend seasoning into bread crumbs; set aside.

Heat oil in skillet.  Cook chicken on both sides just to barely golden.  Transfer to a baking dish and place in a 375 degree oven for 25 minutes.

*Serve with any vegetable casserole, mashed potatoes or buttered egg noodles.

Yield:  4 servings

 

RECIPE:  Zucchini Fitters

2 zucchini, grated

1 teaspoon salt

1 carrot, grated

1 bunch green onions, minced

1 egg, beaten

1/2 cup flour

1 teaspoon TEXAS WOMENS’ SPICY VEGETABLE SEASONING

Vegetable oil for frying

Toss zucchini with salt and let stand for 15-30 minutes.  Drain and squeeze dry.

Mix with remaining ingredients, except the oil.

Heat 1/2 inch oil in a heavy pan over medium-high heat.  Drop zucchini batter by the heaping tablespoonful into hot oil.  Brown on both sides.  Drain on paper towels.  Add more oil if the level falls too low to fry.  Wait a minute or two after adding for it to reheat.

*Serve with just about anything.

*Leftovers are a great snack straight out of the refrigerator.

*Spread some mayonnaise on a couple of slices of Italian bread and make a sandwich with leftover fritters, topping with tomato slices.

*Place on the buffet with a dipping sauce made of plain yogurt, mayonnaise, lemon juice and a dash of cayenne powder.

 

RECIPE:  Roasted Vegetable Medley

2 pounds assorted, chopped vegetables

1/4 cup olive oil

1 teaspoon HIMILAYAN PINK SALT

1 bunch green onions, sliced

2 cloves garlic, sliced

2 tablespoons TEXAS WOMENS’ VEGETABLE SEASONING

1 tablespoon GINGER CHIPS

1/4 cup soy sauce

2 tablespoons rice wine vinegar

1/4 cup water

1 tablespoon olive oil

Toss vegetables with olive oil and salt.  Place in a single layer in a baking pan.  Roast at 425 degrees for 20 minutes, stirring twice during cooking.

While vegetables roast, combine remaining ingredients and set aside.  When vegetables are removed from the oven, pour the sauce over all, stir and return to the oven for another 15 minutes.

**Suggested vegetables:  Carrot, rutabaga, parsnip, potato, green beans, cauliflower and broccoli flowerets, turnip, salsify, whole boiler onions, winter squash, sweet potato

*Serve with fried chicken or pork chops.

*Great with any smoked meat.

*This is a wonderful dish to include in a vegan menu.

*Leftovers can be simmered for 10 minutes in vegetable or chicken broth for a light soup at lunchtime.  Stir in some orzo pasta or brown rice.
